I will agree that Wipeout had the more suitable soundtrack for the futuristic setting, but I really enjoyed the gameplay of Extreme-G. Ther was also that other racing title that came out with Extreme-G for N64 callerd Aero-something... The Crystal Method did the tracks so I ended up playing it.

The original Extreme-G is still a favorite. Too bad the series never went anywhere.

NES had Excitebike, Road Rash wasn't on a Nintendo system, it was mostly a Sega product.
Here is Excitebike, which I still have for my NES, btwftw.
My choice? This bad boy.

Of the three in the topic title, I liked each for their own reasons:
Extreem G: I like the idea of futureistic Motorcycle racing, just wish later instalments were better.
Wipeout: Had the coolest weapons by far. Come on, the Quake disruptor (or somehting like that). That, and the Playstaton versions could be used as Audio CDs.
F-Zero: The ultamate in fast racing. Absolutly loved the sonic speed that Sonic Team brought to GX. Hell, I still play the origonal, on my SNES.
Overall, F-Zero is the best by far.
